Look for freshly roasted coffee

Coffee beans are an agricultural product. They are grains/fruits that grow on a tree – they are not produced in a factory somewhere.

Like all agricultural foods, Coffee beans are best when prepared fresh . At maximum freshness, just a few days after roasting, the sugars are sweet, the natural oils bring out vibrant flavors, the acids are crunchy and balanced, and there is very little bitterness.

However, the grains begin to decompose quickly, after a while. Sugars disappear, oils evaporate, acids break down into bitter compounds, and the flavor once clear becomes faint and indistinguishable.
